It’s made from delicious apple and pear juices. We use champagne yeast in all our ciders and ferment for them 10-14 days. We then cold-filter 4 times and carbonate them before bottling or kegging. It is 5% alcohol by volume with a lovely pear nose and a smooth semi-sweet mouth feel with a dry finish.

At Noon August 21,2017 the skies over the Big Muddy Brewery will turn dark as night since we're at the epicenter of the 2017 Total Solar Eclipse (Totality). We brewed Dark Noon to commemorate this historic event. A Russian Imperial Stout brewed with dark roasted malts, then aged for six months in oak bourbon barrels.

Synchopathic is the cool harmonization of a refreshingly tart and acidic sour ale with citrusy, fruity & floral dry-hops normally in concert with pale ales, with totally rad aromas and flavors reminiscent of grapefruit, orange, lemon, tangerine, pineapple and hints of pine, giving way to a biscuity-crackery malt back beat, low bitterness and a dry finish to bring everything in synch.

Hefeweizen is the most popular beer style of the southern German state of Bavaria for good reason. This wheat beer has a rich banana aroma, but finishes clean, slightly tart, and refreshing. Our brewmaster’s favorite beer style is Hefeweizen, which is probably why he took especially good notes on how to make it during his studies in Germany.
